Vegan banana & chocolate bread.

I thought I'd share one of the yummy recipes I've tried from Lucy Watson's book Feed Me Vegan. This banana & chocolate bread was enjoyed by everyone and really didn't take a lot of effort to make (plus it made my entire house smell amazing).

What you'll need -

70ml vegetable oil, plus extra for greasing
3 large very ripe bananas
100g soft light brown sugar
1 tsp cinnamon
200ml plant based milk (the recipe says almond, I used oat)
300g plain flour
3 tbsp cocoa powder
3 tsp baking powder
1/2 tsp salt
100g walnuts or pecan nuts, chopped
150g vegan dark chocolate, roughly chopped

For the topping - 

1 banana
2 tbsp soft light brown sugar


Directions -

Preheat oven to 200°C (180°C fan) and grease a loaf tin with some oil.

Peel the bananas & put them into a mixing bowl, mash them well until they are creamy. Add the oil, sugar, cinnamon & milk & combine well.

Sift in the flour, cocoa powder, baking powder and salt, then add the nuts & chocolate. Stir until all ingredients are combined & then pour the mixture into the prepared loaf tin.

Peel the banana & slice it lengthways. Lay both pieces on the load with the inside facing up & sprinkle with the brown sugar. Bake in the centre of the oven for 50-60 mins until cooked through & a skewer inserted into the centre comes out clean.

Leave to cool in the tin for 5 mins, then turn out onto a wire rack/cake tray etc to cool a little more. Slice & serve warm (I highly recommend this part!)
